SHAPE UP. To add to your dessert presentation, try incor-
porating several shapes into one presentation. Try position-
ing the dessert in a different way—stand the cake on its side
or use cookie cutters to create an entirely different shape.
No need to serve your cake in the round. We've taken our 10" round
Flourless Chocolate Torte (p. 8), and arranged the slices to create a
long, rectangular display. Finished with sea salt & fresh strawberries.
ADD A LITTLE CRUNCH. A crunch component is exactly
how it sounds: An item added to create a contrasting texture.
This is especially important for soft desserts. We've added
bits of crunchy waffle cone and pecans to our deconstructed
Warm Ginger Caramel Spice Cake (p. 21) below.
We've used irresistible, sweet caramel
popcorn and salty mini pretzels, along
with a drizzle of caramel sauce, to add
a little crunch to our decadent Ultimate
Chocolate Utopia Cake (p. 11).
